Heavenly Hummus


1 15 oz can of chickpeas

4 cloves of roasted garlic

4 T of freshly squeezed lime juice

zest of one lime

1/3 cup tahini

1/3 extra virgin olive oil

1/4 warm water

kosher salt and freshly ground black pepper


Roasted Garlic:
Cut the top of the head of garlic, about 1/4 inch to expose the cloves. Drizzle with 3-4 tablespoons of extra virgin olive oil and cover. We use a seasoned terra cotta garlic roaster but you can use a muffin pan and cover with foil. Roast the garlic in the oven at 350 degrees for 45-60 minutes until soft and golden. Remove from the garlic and allow to cool for 30 minutes. Remove from skin by squeezing the pulp into a bowl.

Drain the chickpeas and pour them into a food processor. Add the rest of the ingredients and pulse until smooth and creamy. Add more water if the consistency is too thick. Add more salt, pepper and lime juice to taste. Scoop into a serving bowl and top with freshly grated lime zest.
